Ingredients

  • 1 (20-ounce) package JENNIE-O® Ground Turkey
  • 1 (14-ounce) can whole kernel corn, drained
  • 1 (14-ounce) can chili-ready tomatoes
  • 1 cup salsa
  • 1 onion, chopped
  • 1 small green bell pepper, chopped
  • 1 (6-ounce) can sliced ripe olives, drained
  • 1 (8.5-ounce) package corn muffin mix
  • 4 cups shredded taco cheese blend
  • Shredded lettuce
  • Sour cream
  • Taco sauce

Directions

  1. Heat oven to 400ºF. Grease deep-dish pizza pan.
  2. Coat large skillet with cooking spray. Add turkey; cook until browned. Add corn, tomatoes, salsa, onion, bell pepper and olives. Bring to a boil, stirring occasionally. Cover; simmer 15 to 20 minutes.
  3. Meanwhile, prepare muffin mix according to package directions. Spread batter into pizza pan. Bake 8 to 10 minutes or until lightly browned.
  4. Remove cornbread from oven; sprinkle with 1 cup cheese. Spread with turkey mixture; sprinkle with remaining 3 cups cheese. Bake 4 to 5 minutes or until cheese is melted. Serve with lettuce, sour cream and taco sauce.
