  • 1 (2.2-pound) package Hormel® Always Tender® Boneless Chef's Prime Roast
  • 1 tablespoon light olive oil
  • 1 tablespoon minced garlic
  • 3/4 teaspoon dried rosemary leaves
  • 3/4 teaspoon dried thyme leaves
  • 3/4 teaspoon dried basil leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground sage
  • 6 slices Black Label® Bacon
  • 3 cups ready-to-eat baby-cut carrots
  • 3 cups frozen pearl onions

Step-by-Step

  1. Buy 1 package Hormel® Always Tender® Pork Chef's Prime Roast.

  2. Heat oven to 375°F. Coat 13x9-inch baking pan with cooking spray.

  3. In bowl, stir together oil, garlic, rosemary, thyme, basil, salt and sage. Place pork roast in baking pan; spread with 1 tablespoon herb mixture. Lay strips of bacon, overlapping if necessary, over top of roast; tuck ends underneath.

  4. In large bowl, stir together carrots, onions and remaining herb mixture. Spoon carrot mixture around roast.

  5. Bake pork roast, stirring vegetables, 1 hour 10 minutes or until internal temperature reaches 150°F. Cover with aluminum foil; let stand 15 minutes or until temperature reaches 160°F.

  6. Serve pork roast with potatoes and salad.
