Buy 1 package Hormel® Always Tender® Pork Chef's Prime Roast.

Heat oven to 375°F. Coat 13x9-inch baking pan with cooking spray.

In bowl, stir together oil, garlic, rosemary, thyme, basil, salt and sage. Place pork roast in baking pan; spread with 1 tablespoon herb mixture. Lay strips of bacon, overlapping if necessary, over top of roast; tuck ends underneath.

In large bowl, stir together carrots, onions and remaining herb mixture. Spoon carrot mixture around roast.

Bake pork roast, stirring vegetables, 1 hour 10 minutes or until internal temperature reaches 150°F. Cover with aluminum foil; let stand 15 minutes or until temperature reaches 160°F.

Serve pork roast with potatoes and salad.
