  • 1/2 cup LA VICTORIA® Thick 'n Chunky Salsa Verde Mild
  • 1/3 cup orange juice
  • 1/4 cup olive oil
  • 1 tablespoon EMBASA® Chipotle Peppers in Adobo Sauce, finely chopped
  • 1 tablespoon grated orange peel
  • 1 tablespoon minced garlic
  • 1 (5-ounce) bag spring salad mix
  • 1/2 cup thin wedges red onion
  • 1/2 cup thin wedges bell pepper
  • 1/2 cup sliced radishes
  • 1 avocado, pitted, peeled and chopped
  • 2 cups carnita meat, heated
  • Roasted pepitas, if desired
  • Pepper, to taste

Directions

  1. To make dressing, in small bowl, whisk together salsa verde, orange juice, oil, chipotle, orange peel, garlic and black pepper.
  2. Divide salad mix evenly among 4 plates. Top each salad with onion, bell pepper, radishes and avocado.
  3. Place warm meat in center of each salad. Drizzle with dressing. Sprinkle with pepitas.
