Ingredients

  • 1 (12-ounce) can SPAM® Classic, diced
  • 2 (10-ounce) cans diced tomatoes, drained
  • 1 tablespoon ground cumin
  • 1/4 cup salsa
  • 2 (15-ounce) cans black beans, drained and rinsed
  • 2 (15-ounce) cans whole kernel corn, drained
  • 1 cup diced bell pepper
  • 4 cups shredded Mexican cheese blend
  • 6 corn tortillas
  • 1 (16-ounce) package sour cream

Directions

  1. Heat oven to 350ºF.
  2. In large skillet, cook SPAM® Classic over medium-high heat until golden brown. Reduce heat to medium. Add next 6 ingredients; mix well. Bring to a boil; simmer 10 minutes.
  3. In 13x9-inch baking pan, layer 1/2 each of SPAM® mixture, cheese and tortillas; repeat layers. Bake 30 minutes. Top with sour cream.
