This recipe is recommended for 8 servings
1 (12-ounce) can SPAM® Classic, diced
2 (10-ounce) cans diced tomatoes, drained
1 tablespoon ground cumin
1/4 cup salsa
2 (15-ounce) cans black beans, drained and rinsed
2 (15-ounce) cans whole kernel corn, drained
1 cup diced bell pepper
4 cups shredded Mexican cheese blend
6 corn tortillas
1 (16-ounce) package sour cream
Directions
Heat oven to 350ºF.
In large skillet, cook SPAM® Classic over medium-high heat until golden brown. Reduce heat to medium. Add next 6 ingredients; mix well. Bring to a boil; simmer 10 minutes.
In 13x9-inch baking pan, layer 1/2 each of SPAM® mixture, cheese and tortillas; repeat layers. Bake 30 minutes. Top with sour cream.
