This recipe is recommended for 6 servings
  • 1/2 cup matchstick-cut carrot
  • 1/4 cup finely chopped onion
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh tarragon or 1/4 teaspoon dried tarragon leaves
  • 2 teaspoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarsely ground pepper
  • 1/2 (17.4-ounce) package frozen puff pastry, thawed
  • 1 (27.2-ounce) package HORMEL® ALWAYS TENDER® Honey Mustard Flavored Pork Loin

  1. Heat oven to 425°F. Line baking sheet with aluminum foil; coat with cooking spray.
  2. In bowl, stir together carrot, onion, parsley, tarragon, oil, salt and pepper.
  3. On lightly floured surface, roll puff pastry into 12x14-inch rectangle. Place carrot mixture in center of pastry, leaving 3-inch border on short side and 4-inch border on long side.
  4. Place pork loin on carrot mixture. Fold short sides of pastry over pork; bring long sides together over pork, sealing edges with water. Place seam-side-down on baking sheet.
  5. Bake pastry 10 minutes. Reduce oven temperature to 350°F. Bake 50 to 55 minutes or until pastry is golden brown and internal temperature of pork reaches 155°F. to 160°F. Let stand 5 minutes before slicing.
