This recipe is recommended for 6 servings
2 (14.5-ounce) cans diced tomatoes with roasted garlic
1/2 cup finely chopped onion
2 tablespoons chopped fresh basil or 1/2 teaspoon dried basil leaves
2 teaspoons chopped fresh marjoram or 1/2 teaspoon dried marjoram leaves
1 tablespoon packed brown sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1 (1.5-pound) package Hormel® Always Tender® Onion Garlic Flavored Pork Roast
Hot, cooked fettuccine
Freshly grated Romano cheese
Directions
Heat oven to 350°F.
In bowl, stir together tomatoes, onion, basil, marjoram, brown sugar, salt and pepper.
Place pork in shallow baking dish. Spoon sauce over pork. Bake 1 hour 5 minutes to 1 hour 10 minutes or until internal temperature of thickest portion reaches 155°F. to 160°F. Let rest 5 minutes.
To serve, toss together hot fettuccine, tomato sauce and pan juices, reserving 3 tablespoons sauce. Arrange fettuccine on warm serving platter. Slice pork; arrange over fettuccine. Drizzle with reserved sauce. Sprinkle with cheese and additional basil, if desired.
