Ingredients

This recipe is recommended for 4 servings
  • 1 tablespoon cumin seeds
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano leaves
  • 1/2 teaspoon pepper
  • 1 (1.25-pound) package Hormel® Always Tender® Original Flavor Pork Tenderloin
  • 4 cups spring mix salad greens
  • 4 apricots, pitted and thinly sliced
  • 4 cherry tomatoes, cut in half
  • 1/4 cup thinly sliced red onion
  • 1/4 cup crumbled feta cheese
  • Champagne or balsamic vinaigrette

Directions

  1. Heat oven to 425°F.
  2. In small bowl, stir together cumin, oil, garlic, coriander, oregano and pepper. Rub mixture over pork tenderloin. Place pork in shallow baking pan.
  3. Bake pork 25 to 30 minutes or until internal temperature reaches 155°F. to 160°F. Let pork rest 5 minutes. Thinly slice pork.
  4. Divide salad greens evenly among 4 plates. Top with pork, apricots, tomatoes, onion and cheese. Serve with vinaigrette.
