This recipe is recommended for 16 servings
1 tablespoon vegetable oil
3 red, yellow or green bell peppers, cut into thin strips
1 cup CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium, drained
1 (4.25-ounce) can CHI-CHI'S® Diced Green Chilies, drained
4 CHI-CHI'S® 8 inch Flour Tortilla Soft Taco Size
1 (8-ounce) package shredded Monterey Jack cheese
Directions
Heat griddle or prepare grill.
In large skillet, heat oil over medium-high heat. Add bell peppers. Cook, stirring frequently, 5 to 6 minutes or until tender. Stir in salsa and chilies.
Evenly spoon bell pepper mixture over half of each tortilla. Sprinkle with cheese. Fold tortillas over cheese.
Place filled tortillas on hot griddle. Cook 4 to 5 minutes on each side or until golden brown. Cut each quesadilla into 4 wedges. Serve with sour cream, salsa or guacamole, if desired.
