2 (16-ounce) jars CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium
1/2 cup (1/4-inch) diced yellow bell pepper
1/2 cup (1/4-inch) diced cucumber
2 tablespoons lime juice
2 tablespoons sliced green onions
1 pound fresh or frozen medium raw shrimp, peeled and deveined
2 tablespoons chopped fresh cilantro
Hot, cooked rice or pasta
Cubed avocado
Notes
To make Garlic Tortilla Chips: Heat oven to 375ºF. Brush tortillas with melted butter. Sprinkle with garlic salt; cut into wedges. Place on baking sheets. Bake 7 to 10 minutes or until golden brown.
Directions
In large skillet, combine salsa, bell pepper, cucumber, lime juice and onions. Bring to a simmer over medium heat. Stir in shrimp. Cook and stir 3 to 5 minutes or just until shrimp turns pink. Stir in cilantro.
Serve over hot rice or pasta with Garlic Tortilla Chips. Garnish with avocado, if desired.
