Ingredients

  • 1 (8-ounce) package cream cheese, softened
  • 1 cup CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium, drained
  • 1 cup shredded Mexican cheese blend
  • 8 CHI-CHI'S® 8 inch Flour Tortilla Soft Taco Size
  • 1 tablespoon vegetable or olive oil
  • 1/2 cup sliced ripe olives

Directions

  1. In medium bowl, stir together cream cheese, salsa and shredded cheese; mix well. Spread 4 tortillas evenly with cream cheese mixture. Top with remaining tortillas. With bat-shape cookie cutter, cut each tortilla into shapes.
  2. In large skillet, heat oil over medium-high heat. Add tortilla cutouts. Cook, turning once, 3 to 4 minutes or until golden brown.
  3. Place olives on quesadillas for "eyes." Serve with additional salsa for dipping, if desired.
