Slow Cooker Pork Loin with Asian Sweet Sherry Sauce

  1. In bowl, stir together sherry, soy sauce, mustard, garlic and ginger.
  2. Sprinkle pork loin with salt and pepper. In large skillet, heat oil over medium-high heat. Add pork; cook 10 minutes or until browned on all sides. Transfer pork to 3 1/2- to 6-quart slow cooker. Pour sherry mixture over pork; cover.
  3. Cook pork on LOW setting 5 to 6 hours or until internal temperature of pork reaches 160ºF. Remove pork from slow cooker; cover to keep warm.
  4. Pour juices from slow cooker into small saucepan. Stir in stir-fry sauce. In small bowl, stir together cornstarch and cold water; whisk into saucepan. Bring to a boil over medium-high heat, stirring constantly. Reduce heat to low; cook, stirring frequently, 2 minutes or until thickened.
  5. Slice pork loin; serve with sauce.
