  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 1 cup CHI-CHI'S® Thick & Chunky Salsa Mild, drained
  • 2 hard-cooked large eggs, peeled and finely chopped
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons finely chopped onion
  • 1/2 teaspoon grated lime peel
  • 1/2 teaspoon chili powder
  • 1/8 teaspoon ground cumin
  • 6 large lettuce leaves

Directions

  1. In large bowl, combine all ingredients except lettuce; mix well. Serve salad on lettuce leaves.
