Bacon and Tomato Pesto Pastries

Make this great-tasting appetizer the next time you're planning to have company.

Make your own pesto: In food processor bowl, combine 1 cup fresh basil leaves, 1/2 cup freshly grated Parmesan cheese, 1/3 cup toasted sliced almonds, 1/4 cup olive oil and 2 cloves garlic. Process until almost smooth.

Ingredients

This recipe is recommended for 32 servings
  • 1 (17.3-ounce) package frozen puff pastry sheets, thawed
  • 1/2 cup basil pesto
  • 32 grape tomatoes, cut in half lengthway
  • 4 ounces goat cheese, crumbled
  • 1/2 cup HORMEL® Real Crumbled Bacon

Directions

  1. Heat oven to 375°F. Grease 32 miniature muffin cups.
  2. Unroll 1 sheet puff pastry onto floured surface. Cut into 16 squares; press gently into muffin pan.
  3. Spoon pesto into each pastry; top with tomatoes. Sprinkle with cheese and bacon. Repeat with remaining puff pastry, pesto, tomatoes, cheese and bacon.
  4. Bake pastries 20 minutes or until golden brown and crisp.
