1 tablespoon vegetable oil
8 CHI-CHI'S® 8 inch Flour Tortilla Soft Taco Size
2 cups diced smoked turkey (8 ounces)
2 cups shredded Monterey Jack cheese
1 (4.25-ounce) can CHI-CHI'S® Diced Green Chilies, drained
1/4 teaspoon pepper
16 leaves fresh spinach or cilantro
1 (16-ounce) jar CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium, if desired
Guacamole, if desired
Sour cream, if desired
Juice of 1 lime
Directions
Brush oil on one side of each tortilla. Sprinkle 1/4 cup turkey, 1/4 cup cheese and 2 teaspoons chilies on half of unoiled side. Season with black pepper; drizzle with lime juice. Top with 2 leaves spinach. Fold unfilled half of tortilla over spinach.
In large skillet, cook 1 quesadilla over low heat, turning once, 4 to 5 minutes or until golden brown. Cut into 3 wedges; keep warm while cooking remaining quesadillas. Serve with salsa, guacamole and sour cream.
