This recipe is recommended for 8 servings
2 cups cooked white rice , cooled
2 cups cooked wild rice , cooled
2 (6-ounce) jars marinated artichoke hearts, drained and cut in half
1 (8-ounce) can sliced water chestnuts, drained and chopped
1 (11-ounce) can mandarin oranges, drained
1 cup sliced celery
3/4 cup chopped toasted pecans
1/2 cup raisins
1/3 cup sliced green onions
1 cup CHI-CHI'S® Thick & Chunky Salsa Mild
2 teaspoons grated orange peel
1/4 cup orange juice
1/4 cup vegetable oil
Directions
In large bowl, combine white rice, wild rice, artichokes, water chestnuts, mandarin oranges, celery, pecans, raisins and onions; mix well.
In small bowl, combine remaining ingredients; mix well. Toss with rice mixture. Refrigerate 1 hour to blend flavors.
