Ingredients

This recipe is recommended for 8 servings
  • 2 cups cooked white rice , cooled
  • 2 cups cooked wild rice , cooled
  • 2 (6-ounce) jars marinated artichoke hearts, drained and cut in half
  • 1 (8-ounce) can sliced water chestnuts, drained and chopped
  • 1 (11-ounce) can mandarin oranges, drained
  • 1 cup sliced celery
  • 3/4 cup chopped toasted pecans
  • 1/2 cup raisins
  • 1/3 cup sliced green onions
  • 1 cup CHI-CHI'S® Thick & Chunky Salsa Mild
  • 2 teaspoons grated orange peel
  • 1/4 cup orange juice
  • 1/4 cup vegetable oil

Directions

  1. In large bowl, combine white rice, wild rice, artichokes, water chestnuts, mandarin oranges, celery, pecans, raisins and onions; mix well.
  2. In small bowl, combine remaining ingredients; mix well. Toss with rice mixture. Refrigerate 1 hour to blend flavors.
