  • 1/2 cup chopped onion
  • 1 tablespoon butter or margarine
  • 1 (14.5-ounce) can diced tomatoes with green chiles
  • 1 (14.5-ounce) can whole tomatoes, cut up
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried thyme leaves
  • 6 ounces goat cheese, cut into 1/4-inch slices
  • 1/4 teaspoon pepper
  • Chopped fresh cilantro


  1. Heat oven to 350ºF.
  2. In medium saucepan, sauté onion in butter until golden brown. Stir in tomatoes and chiles, whole tomatoes, sugar, salt and thyme; bring to a boil over medium-high heat. Boil, stirring occasionally, 10 to 15 minutes or until thickened and liquid is greatly reduced.
  3. In 9-inch pie dish or other 1-quart ovenproof serving dish, spread tomato mixture. Arrange cheese over tomato mixture. Sprinkle with pepper.
  4. Bake appetizer 12 to 18 minutes or until heated thoroughly. Sprinkle with cilantro and serve with toasted French bread slices, crackers or tortilla chips, if desired.
