Ingredients

This recipe is recommended for 16 servings
  • 2 (15-ounce) cans pinto beans, drained and rinsed
  • 2 medium tomatoes, chopped
  • 1 medium green bell pepper, chopped
  • 1/2 cup chopped onion
  • 2 teaspoons minced fresh garlic
  • 1 CHI-CHI'S® Green Jalapeños Whole, minced
  • 1/4 cup vegetable oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon salt
  • 1/8 teaspoon coarsely ground pepper
  • Tortilla chips or pita bread wedges

Notes

  1. Makes 4 cups.

Directions

  1. In large bowl, combine beans, tomatoes, bell pepper, onion, garlic and jalapeño.
  2. In small bowl, combine oil, vinegar, salt and black pepper. Mix well; pour over bean mixture. Toss gently. Cover; refrigerate, stirring once or twice, at least 2 hours or up to 24 hours.
  3. Serve dip with tortilla chips or pita bread wedges.
