Ingredients

This recipe is recommended for 6 servings
  • 3 large tomatoes, sliced
  • 8 ounces mozzarella cheese, sliced
  • 1 small red onion, sliced
  • 1/4 cup whole fresh basil leaves
  • 1 cup CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon minced fresh garlic

Directions

  1. On large serving platter with 1-inch rim, alternately arrange tomatoes, cheese, onion and basil. Top with salsa.
  2. In small bowl, combine oil, vinegar and garlic; mix well. Pour over salad. Cover; refrigerate 1 hour to blend flavors. Remove from refrigerator 30 minutes before serving.
