This recipe is recommended for 8 servings
1 (15-ounce) can pinto beans, drained and rinsed
1 (15-ounce) can garbanzo beans, drained and rinsed
2 cups cherry tomato halves
1 cup CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium
1/2 pound bacon, cooked and crumbled
1 small red onion, sliced
1/4 cup vegetable oil
2 tablespoons white wine vinegar
1 teaspoon sugar
3/4 teaspoon chili powder
1/4 teaspoon coarsely ground pepper
1/4 teaspoon salt
Directions
In large bowl, combine pinto beans, garbanzo beans, tomatoes, salsa, bacon and onion.
In small bowl, combine remaining ingredients; mix well. Toss with bean mixture. Cover; refrigerate 1 hour to blend flavors. Serve on lettuce leaves, if desired.
