Ingredients

  • 1 (15-ounce) can pinto beans, drained and rinsed
  • 1 (15-ounce) can garbanzo beans, drained and rinsed
  • 2 cups cherry tomato halves
  • 1 cup CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium
  • 1/2 pound bacon, cooked and crumbled
  • 1 small red onion, sliced
  • 1/4 cup vegetable oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon sugar
  • 3/4 teaspoon chili powder
  • 1/4 teaspoon coarsely ground pepper
  • 1/4 teaspoon salt

Directions

  1. In large bowl, combine pinto beans, garbanzo beans, tomatoes, salsa, bacon and onion.
  2. In small bowl, combine remaining ingredients; mix well. Toss with bean mixture. Cover; refrigerate 1 hour to blend flavors. Serve on lettuce leaves, if desired.
