Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 1/2 cups diced zucchini
  • 1 cup fresh or frozen whole kernel corn
  • 1 1/2 cups CHI-CHI'S® Thick & Chunky Salsa
  • 2 tablespoons chopped fresh cilantro

Directions

  1. In large skillet, heat oil over medium-high heat until hot; add onion and garlic. Sauté 2 minutes. Stir in zucchini, corn and salsa; reduce heat to low. Simmer 8 minutes longer or until vegetables are tender. Stir in cilantro. Serve hot or at room temperature.
