2 (10-ounce) cans Valley Fresh® Chunk Chicken
1 (4.25-ounce) can CHI-CHI'S® Diced Green Chilies, drained
1/2 cup diced onion
2 ( ) cups shredded Mexican cheese blend, divided
2 (10-ounce) cans La Victoria® Green Enchilada Sauce
1/2 cup sour cream
6 CHI-CHI'S® 6 inch Fajita Tortilla
Directions
Heat oven to 350°F.
In large bowl, combine chicken, chilies, onion and 1/2 cup cheese; mix well.
In separate bowl, combine enchilada sauce and sour cream; mix well. Stir 1/2 cup enchilada sauce mixture into chicken mixture. Spread small amount of enchilada sauce mixture over bottom of 13x9-inch baking pan.
Divide chicken mixture evenly down center of each tortilla. Roll tortillas up; place seam-side-down in baking pan. Pour remaining enchilada sauce mixture over tortillas. Sprinkle with remaining 1 1/2 cups cheese.
Bake enchiladas 25 to 30 minutes or until heated thoroughly. Serve with salsa, shredded lettuce, diced bell pepper and sour cream, if desired.
