Ingredients

This recipe is recommended for 8 servings
  • 1 tablespoon butter
  • 1 cup sliced fresh mushrooms
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped yellow onion
  • 6 large eggs, lightly beaten
  • 1 cup HORMEL® Real Crumbled Bacon
  • 2 cups finely shredded Cheddar cheese, divided
  • 4 (10-inch) flour tortillas
  • Olive oil
  • Sour cream
  • Salsa

Directions

  1. In large skillet, melt butter. Add mushrooms, bell peppers and onion; sauté 3 to 5 minutes or until slightly softened.
  2. Add eggs to skillet; cook until scrambled. Stir in bacon and 1 cup cheese.
  3. Place tortillas on flat surface. Sprinkle half of each tortilla with 2 tablespoons cheese; top with about 1/4 cup egg mixture. Sprinkle 2 tablespoons cheese over egg mixture. Fold tortillas in half.
  4. Lightly brush top and bottom of each folded tortilla with small amount of oil. In hot skillet, heat tortillas, turning once, 4 minutes or until browned and crisp on both sides.
  5. Cut quesadillas into wedges. Serve with sour cream and salsa; sprinkle with additional bacon, if desired.
