Ingredients

This recipe is recommended for 4 servings
  • 1 pound penne
  • 1 (15-ounce) package HORMEL® Italian Style Beef Roast Entree
  • 3 PELOPONNESE® Roasted Red Peppers, drained and chopped
  • 1/2 cup finely grated Parmesan cheese
  • Arugula and baby spinach tossed with balsamic vinegar and olive oil, to serve

Directions

  1. In large pot of boiling salted water, cook penne over high heat, stirring occasionally, 12 minutes or until al dente; drain. Return penne to pot.
  2. Heat beef roast according to package directions; reserve au jus. Break beef into chunks. Add beef, au jus and roasted peppers to penne; stir to combine.
  3. Sprinkle penne mixture with cheese to serve.
