Ingredients

This recipe is recommended for 8 servings
  • 1 (32-ounce) package HORMEL® ALWAYS TENDER® Italian Pork Roast
  • 1 (16-ounce) package rotini
  • 1/2 cup creamy Italian salad dressing
  • 1/2 cup basil pesto
  • 1 cup roasted Florina sweet pepper strips, drained and coarsely chopped
  • 1/3 cup halved Gourmet kalamata olives
  • Freshly shredded Parmesan cheese
  • Fresh basil leaves

Directions

  1. Prepare pork roast according to package directions. With two forks, shred cooked pork; keep warm.
  2. Meanwhile, in large pot of boiling salted water, cook rotini until al dente; drain.
  3. Return rotini to pot. Add dressing, pesto, roasted peppers and olives; toss gently. Garnish with cheese and basil, if desired. Serve with pork.
