Ingredients

This recipe is recommended for 4 servings
  • 2 pounds carrots, cut into quarters
  • 1/2 cup olive oil, divided
  • 2 cups fresh basil leaves
  • 1/2 cup freshly grated Parmesan cheese
  • 1/3 cup toasted pine nuts
  • 2 cloves garlic, minced
  • 1 cup HORMEL® Real Bacon Bits
  • Salt and freshly ground pepper, to taste

Directions

  1. Heat oven to 400°F. Line baking sheet with parchment paper.
  2. On baking sheet, toss together carrots, 1 tablespoon oil and pinch each salt and pepper. Roast, turning once, 30 minutes or until golden.
  3. Meanwhile, to make pesto, in blender container, combine basil, cheese, pine nuts, garlic and enough remaining oil until mixture is smooth paste. Add pesto and bacon bits to carrots; toss. Roast carrots 5 minutes or until bacon is hot.
