  • 2/3 cup thinly sliced green onions, divided
  • 1/3 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 4 cloves garlic, minced
  • 4 small chicken breasts
  • 1 (24-ounce) package HORMEL® Homestyle Mashed Potatoes
  • 1/2 cup basil pesto
  • 1 1/2 cups halved red and yellow cherry tomatoes
  • Salt and freshly ground pepper, to taste
  • Fresh basil leaves, for garnish


  1. Heat broiler. Line baking sheet with aluminum foil.
  2. In medium bowl, combine 1/3 cup onions, the vinegar, oil, mustard, garlic, salt and pepper; mix well. Reserve 2 tablespoons mixture; set aside.
  3. Add chicken to balsamic mixture in bowl; stir to coat. Place chicken on baking sheet. Broil 5 to 7 minutes on each side or until chicken is cooked thoroughly.
  4. Heat mashed potatoes according to package directions. Swirl pesto through potatoes. Serve chicken with pesto potatoes and tomatoes. Drizzle with reserved balsamic mixture. Sprinkle with remaining 1/3 cup onions. Garnish with fresh basil.
