Ingredients

This recipe is recommended for 8 servings
  • 1 tablespoon canola oil
  • 8 boneless, skinless chicken thighs, cut into strips
  • 1/2 (14-ounce) can coconut milk
  • 1/2 cup SKIPPY® SUPER CHUNK® Natural Peanut Butter with Honey Spread
  • 1/4 cup HOUSE OF TSANG® Sweet Chili Sauce
  • 2 tablespoons lime juice
  • 1 tablespoon packed brown sugar
  • 1 1/2 cups shredded romaine lettuce
  • 1/2 cup thinly sliced red onion
  • 2 jalapeño peppers, sliced
  • 8 CHI-CHI'S® Soft Taco Size Flour Tortillas
  • Salt and freshly ground pepper, to taste
  • Lime wedges, to serve

Directions

  1. In large skillet, heat oil over medium-high heat. Add chicken; cook, stirring, 5 minutes or until browned.
  2. Add coconut milk, peanut butter spread, chili sauce, lime juice, brown sugar, salt and black pepper to skillet. Reduce heat to medium; bring to a simmer. Simmer 10 minutes or until chicken is cooked and sauce is thickened.
  3. Spoon lettuce, onion, chicken mixture and jalapeños into tortillas. Serve with lime wedges.
