Directions

  1. In wok or large skillet, heat oil over medium-high heat. Cook chicken in two batches until browned all over. Add stir-fry sauce; simmer, stirring occasionally, 5 minutes or until chicken is cooked thoroughly. Cool slightly.
  2. Arrange spinach, chicken, mandarin oranges and onion on plates. Drizzle with dressing. Sprinkle with cashews.
