Ingredients

This recipe is recommended for 2 servings
  • 1 small onion, diced
  • 1 small sweet potato, cut into 1/2-inch pieces
  • 1 clove garlic, chopped
  • 1 pound Brussels sprouts, trimmed and sliced
  • 1 cup HORMEL® CURE 81® Diced Ham
  • 4 large eggs
  • Salt and pepper, to taste

Directions

  1. In large skillet, cook onion and sweet potato 5 to 7 minutes or until tender. Add garlic; cook 1 minute longer or until fragrant.
  2. Add Brussels sprouts to skillet; cook 2 minutes. Stir in ham; cook 3 minutes longer or until tender. Let stand until bottom starts to caramelize. Stir; let stand 5 minutes.
  3. Season hash with salt and pepper to taste. Create 4 small wells in hash. Add eggs; cook until desired level of doneness.
