Ingredients

This recipe is recommended for 8 servings
  • 1 (16-ounce) can refrigerated buttermilk biscuit dough
  • 8 slices HORMEL® Fully Cooked Bacon, cooked crisply and each slice cut in half
  • 1 tablespoon butter
  • 8 large eggs
  • 8 (2/3-ounce) slices American pasteurized processed cheese
  • Salt and pepper, to taste

Directions

  1. Bake biscuits according to package directions; keep warm.
  2. Cut each bacon slice in half. Cook bacon according to package directions.
  3. In medium skillet, melt butter over medium heat.
  4. In small bowl, combine eggs, salt and pepper; blend well. Add to skillet. Cook, stirring occasionally, until egg mixture is almost set but still moist.
  5. Split warm biscuits. Spoon egg mixture evenly onto bottom half of each biscuit. Top each with cheese and bacon. Cover with top half of each biscuit.
