Ingredients

  • 1 (1-ounce) package Hormel® Fully Cooked Bacon, coarsely chopped
  • 8 large eggs, well beaten
  • 1/2 cup finely chopped green onions
  • 1 (4-ounce) package creamy goat cheese, broken into small pieces

Directions

  1. Coat large nonstick skillet with cooking spray; place over medium heat. Add bacon; cook 3 minutes or until crisp.
  2. In bowl, stir together eggs and onions; pour into skillet. With heatproof rubber scraper, carefully lift edge of omelet; tip skillet slightly so loose egg mixture seeps to bottom of skillet. Continue around skillet until most of loose egg is absorbed.
  3. Reduce heat to low. Sprinkle omelet with cheese; cover skillet. Cook 5 minutes or until cheese is melted and egg is completely set.
