Ingredients

  • 4 medium red bell peppers
  • 1 (2.1-ounce) package Hormel® Fully Cooked Bacon, finely chopped
  • 8 large eggs, well beaten

Directions

  1. Heat oven to 350ºF.
  2. Trim off top 3/4 inch of bell peppers; clean out insides with tip of teaspoon. Place bell peppers in microwave-safe baking dish. Microwave on HIGH (100%) 30 seconds.
  3. In bowl, stir together bacon and eggs; season with salt and black pepper, if desired.
  4. Place bell peppers on baking sheet; fill each bell pepper with 1/4 of egg mixture. Bake 20 minutes or until egg mixture is set. Sprinkle with additional chopped bacon, if desired.
