Ingredients

This recipe is recommended for 4 servings
  • 1 (15-ounce) package HORMEL® Beef Roast Au Jus Entree
  • 1 (14-ounce) can artichoke hearts (not marinated) , drained
  • 1 (24-ounce) package garlic mashed potatoes
  • Butter

Directions

  1. Remove plastic film covering beef roast au jus tray.
  2. Add artichokes to roast beef tray, but do not mix. Cover loosely with paper towel. Microwave on HIGH (100%) 4 minutes.
  3. Microwave mashed potatoes according to package directions.
  4. On serving platter, surround beef with artichokes. Place potatoes at other end of platter; dot with butter. Sprinkle with chopped fresh chives, if desired. Drizzle with au jus or serve on the side.
