  • 1 Hormel® Always Tender® Mesquite Pork Loin
  • 1/4 cup Cajun seasoning
  • 3 tablespoons vegetable oil

Directions

  1. Cut pork loin into 3/4-inch-thick medallions. Coat both sides of medallions with Cajun seasoning.
  2. Heat heavy skillet over medium-high heat until hot. Add oil; heat until oil begins to smoke. Add pork; cook 2 minutes on each side.
  3. Reduce heat to medium-low; cover skillet. Cook until internal temperature of pork reaches 155ºF. and juices run clear.
