Today I am making pork quesadillas in celebration of Cinco de Mayo. I’m using Lloyds® BBQ pork in original BBQ sauce and Chi-Chi’s tortillas. You can add these quesadillas to any party or dinner menu. They’re easy to make and require very few ingredients to assemble.

You want to start by setting the oven temperature to 350°F.

On a greased baking sheet, place 4 Chi-Chi’s tortillas. Spread each tortilla with a generous 1/3 cup of Lloyds® BBQ pork in original BBQ sauce.

Then sprinkle each with 1/4 cup of cheese. Top with remaining 4 tortillas and brush with oil.

These quesadillas are going to bake for about 10 minutes or until the filling is hot and the tops are crisp. Cut each quesadilla into wedges.

Arrange the quesadillas on individual plates or serve them family style and let everyone help themselves to the condiments – some Wholly® Salsa, Wholly® Guacamole and some sour cream.

BBQ Pork Quesadillas

8 Chi-Chis fajita-size flour tortillas
1 (18-ounce) tub Lloyds® BBQ pork in original BBQ sauce
1 cup shredded Mexican four-cheese blend
1 tablespoon vegetable oil
Wholly® salsa, to serve
Wholly® guacamole, to serve
Sour cream, to serve

Heat oven to 350°F. Grease baking sheet.

On baking sheet, place 4 tortillas. Spread a generous 1/3 cup of pork on each tortilla. Sprinkle each with 1/4 cup of cheese. Then cover with remaining 4 tortillas; brush with oil.

Bake quesadillas about 10 minutes or until filling is hot and tortillas are crisp. Cut quesadillas into wedges.

Serve with salsa, guacamole and sour cream. Serves 4.
