Satisfy your Mexican cuisine cravings with our hearty and delicious Black Bean Tamale Pie with Cheese Crust – featuring Chi-Chi's brand and La Victoria brand products from Hormel.
First, pre-heat the oven to 375-degrees. Then, in a large skillet, cook ground beef, chopped green bell pepper, and chopped onion until the beef is no longer pink. Next, stir in black beans, Chi-Chi's or La Victoria Salsa and minced jalepenos. Set the beef mixture aside.
In a medium bowl, combine corn muffin mix, 1 cup shredded sharp Cheddar cheese, milk and egg. Stir just until moistened. Press the mixture on the bottom and up the side of a greased 9-inch pie plate. Spoon the beef mixture on to the crust.
Bake 20 to 30 minutes or until set. Remove from the oven, sprinkle with 1 cup of cheese and bake an additional 2 to 5 minutes or until the cheese is melted. Let stand 5 minutes.
