Arizona Chili Cheese Crisps

Kick off your south-of-the-border feast with our Arizona Chili Cheese Crisps. In a large skillet, heat 1-inch of vegetable oil to 360 degrees. Fry Chili's 8-inch soft flower tortillas one at a time until golden brown on both sides. Drain the tortillas on paper towels. Place the fried tortillas on a large baking sheet and top with CHI-CHI'S® Salsa, CHI-CHI'S® Diced Green Chilis, shredded cheddar cheese and parmesan cheese. Bake in a 350 degree oven for 8 to 10 minutes or until cheese is melted. It's a crunchy, colorful meal-starter that everyone will love.

Southwestern Chicken Taco Salad

A new twist on an old favorite; our Southwestern Chicken Taco Salad comes to life with CHI-CHI'S ® and Hormel® Premium Chunk Breast of Chicken. First, take 12-inch by 12-inch of aluminum foil and form into balls. Lightly spray, with non-stick cooking spray, one side of each CHI-CHI'S ® Soft Flower Tortillas. Then spray the inside of small baking dishes custard cups. Gently place tortillas into bowls shaping as necessary. Place a ball of foil in the center of each cup and bake in a 350 degree oven for 10 minutes. Remove the foil balls and bake an additional 3 to 5 minutes or until the shells are crisp and lightly browned. Meanwhile, in a medium skillet, stir together Hormel® Chunk Breast of Chicken, CHI-CHI'S® Taco Seasoning, and water over low heat. Cook 3 to 5 minutes - stirring occasionally. Add beans and corn, and cook for an additional 3 to 5 minutes - or until hot. Place shredded lettuce into each tortilla and fill with the chicken mixture; top with tomato, cheese and avocado. Serve with a mixture of CHI-CHI'S® Salsa and sour cream, and you've got a Mexican Night winner.
