Just about everything is great on the grill – but our Mediterranean Sun-Dried Tomato Pork Filet just might top your list of favorites.

We begin with the filling. In a bowl, combine feta cheese, finely chopped red onion, chopped and pitted Peloponnese kalamata olives and chopped, fresh oregano. Stir together and set aside. Heat the grill to medium heat or about 350 degrees.

Next, we'll butterfly our Hormel Always Tender Sun-Dried Tomato Filet by first cutting the long way down the center of filet – but not cutting completely through. Press open the filet and make a second long cut halfway between the first cut and the long outside edge of the filet – again, not cutting completely through. Repeat this cut on the other side of the filet. Then, gently pound or press the filet flat.

Spread the cheese mixture over the flattened filet. Tightly roll up the filet starting on the long edge. Secure the filet with butchers string. Beginning at one end, wrap the string around the filet and tie off. Create a loop and pull the string through the loop and around the filet. Repeat this action until the filet is secure and tie off the end. Brush the filet with olive oil and place the filet, top side down, directly on the grill rack and cover. Cook 30 to 35 minutes until golden brown and when the internal temperature reaches 155 to 160 degrees. Let the meat rest 5 minutes before slicing.
